The complete guide to coffee-to-water ratio

Ratio is the single most important variable in a consistent cup. Get it right and everything else — grind, time, temperature — becomes fine-tuning.

What a coffee ratio actually means

A coffee-to-water ratio compares the weight of ground coffee to the weight of water. Written as 1:16, it means one gram of coffee for every sixteen grams of water. Because a milliliter of water weighs almost exactly one gram, you can read the water side as either grams or milliliters — 320 g of water is 320 ml.

Working by weight instead of scoops removes the biggest source of inconsistency. Beans differ in density by roast and origin, so a “scoop” can swing by several grams. A ten-dollar kitchen scale is the most reliable upgrade you can make.

Each brewing method has a practical starting ratio. These are launch points, not rules — adjust to your taste and equipment.

Stronger or lighter?

  • Lower ratio (more coffee), e.g. 1:15: bolder, heavier body, more intensity.
  • Higher ratio (less coffee), e.g. 1:17: brighter, cleaner, more delicate.
  • Adjust in single steps. Moving from 1:16 to 1:15 is a clearly noticeable change.

Ratio vs. extraction

Ratio sets how much coffee ends up in the cup; extraction sets how much flavor you pull from that coffee. If a brew tastes weak even at a strong ratio, the fix is usually a finer grind or longer contact time, not more coffee. Change one variable at a time so you can tell what did what.
